A farm that "always has mushrooms" isn't running on luck or extra effort — it's running a weekly loop where a new batch starts every week (or two) while an older batch is finishing. Build the loop once, keep it staggered, and the harvest evens out on its own.
The weekly rhythm
This is one documented small-farm schedule — a proven example to adapt to your own days, room count, and species mix, not the only correct rhythm. What matters is the sequence and the overnight sterilize step, not that it has to be Monday through Thursday.
Mix and bag substrate
Mix the week's bulk substrate and get it bagged. This is the one day of pure prep — no colonized material moves yet, no fruiting decisions get made. It sets up everything that happens the rest of the week.
Sterilize overnight
Run the barrel or autoclave load overnight so the bags are fully sterilized and cooled by the time you need them. An overnight cycle keeps sterilization off the clock during working hours and gives the load time to cool before inoculation.
Inoculate
Inoculate the cooled bags under clean, flow-hood conditions. This is the highest-contamination-risk step in the whole week — the sterilization on Monday night only pays off if the inoculation environment is actually clean.
Transfer both directions
Two moves happen the same day: this week's freshly inoculated bags go into the incubation room, and last week's fully colonized bags come out of incubation and into the fruiting room. Thursday is the day space actually turns over.
Harvest, monitor, clean
Every day, regardless of what week-stage you're in: harvest maturing flushes, check for contamination before it spreads, manage humidity and fresh-air exchange (FAE) in the fruiting room, and clean. This is the rhythm that doesn't wait for Monday.
Stagger a new batch into this loop every 1–2 weeks so the weekly harvest stays roughly even instead of arriving in a single overwhelming wave. As you scale, add a second fruiting room rather than cramming more blocks into one — it smooths the harvest curve instead of just raising the peak.
Why you stagger batches
If you mix, sterilize, inoculate, and transfer one giant batch and then wait for the whole thing to fruit and finish, you get a farm that produces everything at once and nothing in between — a flood, then a dead week, then another flood. Starting a new batch every 1–2 weeks breaks that pattern: at any given moment you have several batches at different stages, so harvest volume evens out into something close to a steady weekly number.
Staggering also exposes a scheduling truth that trips up new farms: you need more incubation space than fruiting space. Colonization is the slow phase — a bag can sit in incubation for weeks — while active fruiting and harvest is comparatively short. If incubation and fruiting rooms are sized equally, incubation becomes the bottleneck: colonized bags have nowhere to wait, and the whole staggering schedule backs up.
Species timelines
Cycle time — inoculation to first harvest — is the number that actually drives your calendar, and it varies enormously by species. These are typical ranges; strain, substrate, and grow-room conditions all shift them.

Fruiting temperatures, briefly: oyster ~60–75°F, king trumpet ~55–65°F, lion's mane ~60–70°F, shiitake ~55–70°F. Oysters are also the most fresh-air-hungry of the group — let CO2 climb above roughly 800–1000 ppm and you get leggy stems and small caps instead of a dense, well-formed fruit body.
The big lesson in this table: don't put a 10-week shiitake on the same weekly loop as a 3-week oyster. If you try to run both on one rhythm, either the oyster loop starves waiting for shiitake space to free up, or the shiitake gets shortchanged trying to match a weekly cadence it can't hit. Sizing the calendar to a weekly target
The calendar answers "when." Biological efficiency (BE) answers "how much." Combine cycle time with yield per block and you can work out how many blocks need to be in the pipeline at once to hit a weekly harvest target.
Say a pink oyster block yields 1.5 lb on its first flush, and you want ~40 lb/week fruiting out. 40 ÷ 1.5 ≈ 27 blocks need to be actively fruiting in a given week to hit that number. Because pink oyster's cycle runs roughly 2.5–4 weeks, you're not making 27 blocks once — you're keeping a staggered pipeline going so that ~27 blocks are always at the fruiting stage, with the next batch already colonizing behind them.

When the standard advice is wrong
The mix/sterilize/inoculate/transfer/harvest rhythm above is solid, but it assumes a few things that don't always hold. Here's where growers get bitten:
- Mixing fast and slow species on one rhythm. A weekly cadence tuned for 3-week oysters will starve a 10-week shiitake batch of the space and attention it needs — and vice versa if you try to slow the whole farm down to shiitake pace. Run them on separate tracks.
- Under-building incubation space. Because colonization is the long phase, a farm sized with equal incubation and fruiting square footage will bottleneck in incubation first, no matter how well the weekly staggering is planned on paper.
- Skipping the contamination check at transfer day. Thursday's transfer is the moment a contaminated bag is easiest to catch and pull — before it goes into a shared fruiting room and threatens everything around it. Treat transfer day as an inspection step, not just a move.
- Assuming every block in a batch fruits on the same day. Even bags mixed and inoculated together on the same Wednesday don't all colonize at exactly the same rate. Stagger expectations within a batch too, or you'll read normal biological variation as something going wrong.
The lesson that actually made the harvest steady wasn't a better recipe or a fancier grow room — it was refusing to let the schedule slip. Early on I'd skip a Monday mix day because the last batch wasn't ready to transfer yet, "just this once," and that one skipped week showed up as a hole in the harvest a month later, right on schedule with the cycle time. The rhythm beats hustle. A farm that mixes every Monday no matter what, and staggers every 1–2 weeks no matter what, out-produces a farm that works twice as hard in bursts and coasts in between.
